 Do you know how long it takes, and how hard it is, to get 5 children to take a good photo? It takes longer than you might think. Someone has to look at their feet. Or the sun is too bright. Or maybe their sister is poking them. I'm so thankful for digital cameras!!            We had a lovely Resurrection Sunday at my sister and brother in-law's new home. The sun was shining! I can't recall the last Easter in Oregon when the sun was shining and it was warm! There was plenty of good food, family we hadn't seen in awhile, and eggs hunts. Oh, did we have egg hunts! First for the little kids, then the other kids and then for the 'grown-up' kids; and then the little kids went and hid the eggs over and over for each other to find. For the first rounds of hiding, the eggs contained chocolates, jelly beans, and money! Yes, some aunts and uncles like to spoil the nieces and nephews. The coming weekend

Easter is coming up and thus a menu needs to be made. And I've got my list making notepads ready to go! Instead of the traditional I want to try a little something different. Dreams of just a platter of bacon were nixed when I invited the in-laws over for Easter dinner. Instead, we'll be having a nice ham. But then I got a little crazy and decided on potato salad. It must have been the sun shining in the window that did it for me - it looks like a warm day outside (even though it isn't!) and that makes me think of summer, and picnics and potato salad. We'll have some corn, carrots, and salad. Hopefully I can make a batch of dinner rolls. And, of course, a delectable dessert. I'm thinking either cream puffs, with pudding inside, or else a chocolate coconut cake. We've also got to make these nests . ** I made them last year for Easter and they seemed to be a big hit. Eggs

In the past when I have written about cooking with eggs it is usually to show my gaffes. (Cool word, gaffes.) But today we have a different story! Today I can celebrate my prowess in the kitchen. Today I cracked all the eggs one-handed. Have you seen the movie "Sabrina"? (It's one of my favorites.) Not the modern one with Harrison Ford, but the original with Audrey Hepburn and Humphrey Bogart. She goes to Paris to a cooking school and one of the skills she has to conquer is cracking eggs one-handed, no mess. Tonight while making dinner - breakfast food because G is not here for supper - I needed to crack a lot of eggs, and I had a fussy baby (no surprise there). So I just did it. I struck the egg against the bowl, used my thumb to press in and then my claw-index finger along with middle finger and thumb, to open it. I was nearly giddy with delight. All nine eggs came out without shells. I think this should be in the Book of Awesome .
